Cauliflower and parmesan soup

 

 

The perfect dish to serve during winter. It warms you up! The ingredients I used are for 4 servings and it took me approximately 30 minutes to cook.

 

 

 

Ingredients:

  • 1 large minced onion
  • 2 garlic cloves
  • 1 tablespoon of butter
  • 1 large loaf of cauliflower
  • 750 ml of milk
  • 50 g of grated Parmesan cheese
  • chives and crisp bread

Preparation:

 

  • Fry in a pan the minced onion together with the 2 mashed cloves and a large spoon of butter until they soften.
  • Add the cauliflower chopped in big chunks, and then pour 750 ml of milk and simmer everything on low heat until the cauliflower is softened.
  • Mix everything in a blender until you obtaining a cream. Add 50 g of grated Parmesan cheese and sprinkle chives cut into long pieces.

 

I recommend serving with crunchy bread.
