2/3 cup creamed corn
1 Tbs. vegetable oil
2 tsp. honey
1/4 cup grated cheddar cheese
1/4 cup salsa
1/3 tsp. salt
1/2 cup cornmeal
1-1/2 cup bread flour
1 tsp. yeast
flour equivalents: 2 cups
(1 pound loaf)
cycle: white, sweet; no timer (creamed corn)
setting: light to medium
Method for Mexican
corn bread
The liquid for this recipe
comes from the creamed corn and the salsa. The
type you use could throw off the ratio so check
the dough about 3 to 5 minutes into the kneading
and add more water or flour as necessary. Serve
with suitable white wine and enjoy your Mexican
corn bread.
