1 lb. lean ground beef or sirloin
1 small onion, diced
1 16oz. can stewed tomatoes
1 LB. diced velveeta cheese
chili powder to taste
chopped jalapenos to taste

Brown ground beef with onion in medium saucepan. Drain any excess fat.

On low flame, add velveeta, stirring until melted. Add tomatoes, chili powder, and jalapenos. Heat until hot and melted.

Place in chafing dish to keep warm. Serve with tortilla chips or bread sticks.

Mexican Corn Bread - Mexican recipes


The following directions are for the equivalent of 2 cups flour. Adjust as necessary for your own bread machine or adapt to oven method.

2/3 cup creamed corn
1 Tbs. vegetable oil
2 tsp. honey
1/4 cup grated cheddar cheese
1/4 cup salsa
1/3 tsp. salt
1/2 cup cornmeal
1-1/2 cup bread flour
1 tsp. yeast

flour equivalents: 2 cups (1 pound loaf)
cycle: white, sweet; no timer (creamed corn)
setting: light to medium

The liquid for this recipe comes from the creamed corn and the salsa. The type you use could throw off the ratio so check the dough about 3 to 5 minutes into the kneading and add more water or flour as necessary.

Pasta Sopa De Espaguetis Con Queso Y Crema

(Spaghetti With Cheese And Cream) - Mexican recipes


2 quarts water
1/4 small white onion
1 garlic clove, peeled
1 small bay leaf
Dash dried oregano, Mexican preferred
1 tablespoon safflower oil
Sea salt
6 ounces spaghetti
2 tablespoons unsalted butter
1 cup creme fraiche
2 to 3 ounces queso fresco, queso manchego or medium-sharp Cheddar cheese

Place water in saucepan and add onion, garlic, bay leaf, oregano, safflower oil and sea salt to taste. Bring to boil and add spaghetti. Cook over high heat until pasta is tender - not al dente. Strain, discard cooking water, rinse pasta in cold water, drain and set aside.

Melt butter in deep fryer or sauté pan. Stir in cooked pasta and heat through, turning over thoroughly.

Add creme fraiche and salt to taste and heat through over low heat, about 3 minutes. Add cheese, stir once and serve immediately.

Makes 4 servings.
