Ingredients for California State Fair Salsa

½ jalapeño pepper, to start with
4 sprigs of cilantro
2 to 3 garlic cloves

¼ red onion, coarsely chopped
¼ green bell pepper, coarsely chopped

4 to 5 roma tomatoes

juice of ½ a lime
salt and pepper to taste

Method for California State Fair Salsa

Using a salsa maker, whirl jalapeño, cilantro and garlic until small. Add the onion and bell pepper to above mixture and whirl until medium sized pieces.Add tomatoes to above mixture and whirl until happy with the size. Add lime juice, pepper and salt to taste. Cover and chill at
least 30 minutes. Serve with your favourite salad and chilled wine. Enjoy your California State Fair Salsa.
