Ingredients for Caribbean Fruit Salsa

½ honeydew melon peeled seeded and dices
½ Cantaloupe peeled seeded and dices
12 pineapple, peeled, cored and dices
1 papaya peeled and diced
1 mango peeled and diced
1 red pepper seeded and diced
1 green pepper seeded and diced
1 purple onion diced
½ tablespoon chopped garlic
½ tablespoon cumin
½ tablespoon salt and sprinkling of black pepper to taste

1 tablespoon lime juice
2 tablespoon olive oil
½ tablespoon coarse black pepper
½ bunch cilantro, stemmed and chopped
2 jalapeños, seeded and finely diced

Method for Caribbean Fruit Salsa

In a large bowl, mix all ingredients together. Refrigerate for a few hours. Great as a starter or served with poultry or fish. Also serve with your favourite salad and chilled wine. Enjoy your Caribbean Fruit Salsa.
