Ingredients for Cranberry Mango Salsa

1 cup fresh cranberries
¼ cup granulated sugar
¼ cup water
1 large ripe mango, peeled and diced
1 small diced yellow bell pepper
1 kiwi fruit, diced
½ cup finely chopped purple onion
¼ cup finely chopped fresh cilantro
1 Tablespoon lime juice
1 small serrano pepper, seeded and minced
1 garlic clove, minced
Salt and pepper

Method for Cranberry Mango Salsa

In food processor, coarsely chop cranberries. Transfer to heat-proof bowl; set aside. In small heavy saucepan, combine sugar and water over medium-high heat; bring to a boil, stirring. Cook (without stirring) for 3 minutes. Immediately pour syrup over cranberries; let cool. Stir in mango, bell pepper, kiwi fruit, onion, cilantro, lime juice, serrano pepper and garlic into cranberry mixture. Season to taste with salt and pepper. Serve as desired with your favourite salad and chilled wine. Enjoy your Cranberry Mango Salsa.
