Here's a couple of soup recipes to enjoy

Chicken Velvet Soup - soup recipes


Yield: 5 Servings

6 tb Butter or margarine
1/2 c Milk
3 c Chicken broth
1 ds Pepper
6 tb Flour
1/2 c Light cream
1 c Fine chopped cooked chicken

In saucepan, melt butter or margarine. Blend in flour, then stir in
milk, light cream and chicken broth. Cook over medium heat, stirring
constantly, until mixture thickens and comes to a boil. Reduce heat.
Stir in finely chopped cooked chicken and dash of pepper. Return
soup to boiling and serve immediately. Makes about 5 cups of soup.

FRESH VEGETABLE BASIL SOUP recipes

1 Stalk Celery
2 Carrots
1 lg Potato
2 lg Tomatoes
4 c Water
3 ts Dried Basil
3 ts Garlic powder
1 Bay leaf
1 t Thyme
2 tb Dried parsley
1/2 sm Cauliflower
2 sm Zucchini
1/2 lb Fresh or frozen Green Peas
Salt to taste

Chop Onion Slice Celery Slice carrots 1/8 inch thick
Peel and cube potatoes Peel and dice tomatoes Break
cauliflower into flowerets Slice zucchini 1/4 inch
thick

In a 5 quart pan over medium heat saute, with a small
amount of water until tender, onion, celery and
carrots.

Add other ingredients in pan the potatoes, tomatoes
additional water, basil, garlic powder, bay leaf,
thyme and parsley. Bring to a boil, then cover and let
simmer for 15 minutes.

Add cauliflower and zucchini and simmer for 10 more
minutes. Add peas and simmer for another 5 minutes, or
until all vegetables are tender. Season to taste with
salt if desired.

Serve. Garnish with a small celery heart stalk with
the leaves still attached, if desired.

SPLIT PEA SOUP - soup recipes

Yield: 1 servings

1 c Split peas
1 ea Ham bone
3 qt Water
1 T Onion, minced
3 T Butter
3 T Flour
1 t Salt
1/8 t Pepper
2 c Milk

Wash and soak peas in water to cover, overnight. In the morning drain
off the water and cover with 3 quarts of fresh water. Add the ham bone
and onion and cook until peas are soft. Rub through a sieve. Melt the
butter and stir in the flour until well blended and smooth. Add the
salt, pepper and milk and cook, stirring constantly until the mixture
thickens. Combine with the strained liquid and cook until rather
thick. Serve hot.
