1 cup almonds or cashews
¾ cup water
1 Tablespoon maple syrup (optional)
½ teaspoon vanilla (optional)
If you get excited by yummy dairy-free vegetarian
recipes, you're gonna love this one. For the smoothest
consistency, use cashews or peeled almonds. Because
of their alkaline nature, almonds help keep your
blood at a neutral Ph. And if you buy them raw,
they'll germinate when you soak them. Note for
raw friends: Cashews are heated after being picked,

Soak 1 cup of almonds or
cashews in 2 cups of water. If you're in a very
warm climate, soak them in your refrigerator.
After 8-12 hours, discard the soaking water and
rinse the nuts. In a blender, place the nuts and
enough fresh water to allow the blender to operate.
Blend, gradually adding enough water to achieve
a smooth consistency. Yields 1 ½ - 1 ¾
cups.

Veggieburger

Yield: 1 servings
1 c Walnuts
1 1/2 c Cooked rice
1 Onion
2 T Bacon bits
2 T BBQ sauce
x Salt
x Black pepper
x Garlic powder
x Flour
Blend the walnuts, rice, bacon bits, BBQ sauce,
and spices into a paste.
Saut the onions and add them to the mix. Add enough
flour so that it forms
a workable dough. Shape into patties and sprinkle
flour onto the outsides
of the patties. Refrigerate for at least one hour.
Fry, or grill, or bake
(they hold together reasonably well on the grill,
only slightly more
crumbly than an actual hamburger is.) - vegetarian

Serve with extra BBQ sauce on a bun, perhaps with
onion, lettuce, tomato,
or whatever else you want on it. Makes six.

Spicy
Mexican Bean Burger

Yield: 8 servings
16 oz Canned red kidney beans;
Drained & rinsed
1/2 sm Onion; coarsely chopped
1/2 Green pepper; coarsely ch.
1 Carrot, steamed; mashed
1/8 c Picante sauce or salsa
1 c Bread crumbs
1/2 c Flour
1 ts Black pepper or to taste
Dash of chili powder
Mix all ingredients together. Add more flour to
create a firmer mixture, or
more salsa if mixture is too stiff. Form into
balls and smash into patties.
Bake at 450 degrees for 15-20 minutes, until firm,
brown and done. Serve on
whole wheat bun with lettuce, tomato and salsa.
Accompany with tortilla chi
and a large glass of iced tea. These can be grilled
or pressed in those
new=fangled sandwich presses... a lot quicker
and tastier than baking. The
judges suggested adding 1/2 teaspoon of salt to
