Squash
and Greens Salad
1 cup grated
zucchini
1 cup grated crookneck squash
1 cup grated carrots
1/2 cup chopped red bell pepper
1/2 cup chopped chives or sweet onion
Toss all ingredients and serve on a bed of greens
with your favorite salad dressing.
Spinach
Salad
3 cups spinach
1/2 sweet red onion thinly sliced
1 small cucumber thinly sliced
1/2 red pepper thinly sliced
8-10 cherry tomatoes
Wash spinach, wrap in cloth
towel, and place in refrigerator for a half-hour
while preparing the rest of the vegetables.
Thinly slice onion, red pepper, and cucumber.
Halve tomatoes. Tear crisped spinach into small
pieces and toss with remainder of raw vegetables.
Add your favorite healthy salad dressing.
Fennel salad with
Lemon
3 fennel or anise bulbs chopped into small chunks
Juice of 2 lemons
1/8 cup extra virgin olive oil
Mix ingredients and enjoy!
Mixed
Greens with Apples
1 cup of spinach
1 large Granny Smith apple
1 cup of kale
1 cup of leaf lettuce
1 cup of Swiss chard or other greens of choice
Tear greens into bite-sized pieces. Peel and dice
apple into small pieces. Mix well. Top with Poppy
Seed Dressing.
