Carrot
salad
1 cup grated carrot
1c chopped tomatoes
large bunch of parsley - chopped
1 clove garlic, crushed
1/4 c ground nuts
mix in 2 T olive oil
Mix the ingredients and
serve
Apple
Salad
3 1/2 cups diced apples
1 cup sliced celery
1 cup diced banana
1/2 cup raisins
Mix the ingredients and
serve in lettuce cups
Sprout
Salad
1 cup any sprouts you have on hand (alfalfa, lentil,
sunflower, or other)
1 cucumber, diced
2-3 scallions, chopped
3 T. lemon juice
2 T. tahini
1 clove garlic
Pinch cayenne
Put the salad ingredients
in a serving bowl. In a small bowl mix the lemon
juice, tahini, and garlic minced with the salt.
Add pinch of cayenne. Whisk together well. Pour
dressing over salad and toss to blend flavors
Cabbage
salad - Indian style
2 cups thinly shredded cabbage
2 cup shredded carrot
1/2 cup crushed roasted peanuts
1/4 cup peanut oil ( salad oil is an OK substitute)
1 hot green chilli chopped
1/2 cup chopped cilantro
1/2 tsp. honey
lemon juice and salt to taste
Mix everything except salt
and lemon - add them only when ready to eat.
