Vegetarian dish #1: Grilled Tofu Skewers


Firm tofu - 500g
Zucchini - 1
Red pepper - 1
White onion - 1/2
Light soy sauce - 1/4 cup
Rice vinegar - 3 tbsp
Red wine - 1/4 cup
Hot sauce - 1/2 teaspoon
Sesame oil - 1 tbsp
Minced garlic - 1 teaspoon

Pat the tofu dry and cut into 3/4 inch cubes.
Mix soy sauce, red wine, vinegar, hot sauce, sesame oil, and garlic. Marinate the tofu with this for several hours, best to leave it over night.
Cut the zucchini, red pepper, white onion in to 1 inch pieces. Thread the tofu and a good mix of the veggies on to a skewer.
Cook on a grill over medium heat. Turn and baste every once awhile. Cook for 8 to 10 minutes.

Vegetarian dish #2: Tortilla Egg Cups


6 inch flour tortillas - 6
Red pepper - 1/2
Green pepper - 1/2 (finely chopped)
Cilantro - 2 to 3 tbsps
Jalapeno pepper - 2 tsps (minced)
eggs - 6
Salt and pepper - add to taste

Lightly grease 6 muffin cups, and press a tortilla into each.
Mix the green, red peppers, cilantro, and hot peppers. Reserve 1/4 cup and spoon the remaining into each of the 6 tortillas.
Break an egg on top of each, and sprinkle some salt and pepper.
Bake at 375 degrees for 15 to 20 minutes. Then sprinkle on the leftover peppers mix on each and serve.
