Cupcakes with Raspberries and Coconut

Cupcakes with raspb

 

 

A cute, delicious and easy to cook dessert which will make your day better! The ingredients I used are for 12 servings and it took me 45 minutes to prepare. All of my friends loved them especially because they were so colorful!

 

 

Ingredients:

  • 175g of flour mixed with 1/2 teaspoon of baking powder
  • 140 g of sugar
  • 50 g of coconut flakes
  • 140 g of soft butter
  • ½ teaspoon of vanilla extract
  • 2 large eggs
  • 4 tablespoons of milk
  • 140 g of raspberries, fresh or frozen

 

Icing Ingredients:

  • 280 g of powdered sugar
  • 85g of soft butter
  • 4 tablespoons of raspberry sauce
  • 1 teaspoon coconut flakes for decorating

 

Preparation:

  • Heat up the oven to 190 C. Place the special papers in a tray for muffins.
  • Mix all ingredients, except the raspberries, in a bowl. Then slowly and gently add and incorporate the raspberries.
  • Place the composition in the tray, by dividing it to the number of compartments that you have, I have 12 on my tray for example. Let them bake for approximately 20 minutes; you will notice when they get golden-brown.
  • Let them cool.

 

Icing Preparation:

  • For the icing mix the powdered sugar, butter and raspberry sauce to form a fluffy, light icing.

Put the icing on top of the cupcakes, decorating by preference and sprinkle the coconut flakes on top.
