Muffins with Figs and Almonds

muffins with figs and almond flakes

These should be called “muffins for any time of the day” because you can serve them at any time, either with coffee, either as a dessert, or together with a scoop of ice-cream. The ingredients I used are for 12 servings and it took me approximately one hour to prepare.

Ingredients:

  • 175 g of flour mixed with 1/2 teaspoon of baking powder
  • 175 g of soft butter
  • 175g of sugar
  • 175g of ground almonds
  • 1 tablespoon rose water
  • 3 large eggs
  • 5 ripe figs
  • 1 handful of almond flakes
  • powdered sugar, for decorating (optional)

Preparation:

  • Preheat the oven at 180 ° C. Place the special baking paper forms in a tray for muffins. Mix by using a food processor the flour, butter, sugar, ground almonds, rosewater and eggs until you get a homogeneous mixture.
  • Divide the mixture between the spaces on the tray (in my case 12).
  • Cut the figs into small cubes and place them in equal quantities in each space together with the mixture.
  • Sprinkle almond flakes on top. Place the tray in the oven for approximately 40 minutes.
  • You can add powdered sugar on top of them in order to decorate.
