Spiced Potato Salad

This entire meal consists of 200 kilocalories, which is great if you’re on a diet! Even though it can be considered died food, it still is a tasty dish and easy to cook which takes approximately 30 minutes of your time to cook.

 

 

 

Ingredients:

  • 2 tablespoons of sunflower oil
  • 1 onion, minced
  • 2 cloves of garlic, chopped
  • 1 tablespoon ginger, chopped
  • 500 g potatoes cut into small cubes of 2 cm
  • 1 large red pepper, cut in half, seedless, chopped
  • ½ teaspoon of mustard seeds, ½ of cumin
  • 250 g of spinach leaves

 

Preparation:

  • Preparing this dish is quite easy…first place into a big pan the oil, onion, garlic and ginger and fry them together for approximately 3 minutes.
  • Afterwards, add the pepper, potatoes, spices and half a teaspoon of salt and stir continuously for five minutes.
  • Add a tablespoon of water, cover the pan, and leave it over medium heat for approximately 8 minutes.
  • I normally check if they are ready by using a fork. If they are ready, add the spinach and let it soak in the mixture.
  • Remove it from heat and serve it.
