Pasta with spicy tomato sauce and spinach

 

 

What tempted me to cook this recipe was the fact that it said that it is spicy, and spicy it is indeed! I love spicy food and so does my boyfriend, so this dish was a big success in our home!

If you aren’t really a big fan like we are I recommend you not to add the chili flakes to the sauce.

 

 

Ingredients:

  • 2 tablespoons of olive oil
  • 1 onion, cut into small pieces
  • 2 garlic cloves, smashed
  • ½ teaspoon of chili flakes
  • 200 g of pasta
  • 400 g of tomato chunks, canned
  • 100 ml of red wine
  • ½ teaspoon of dried oregano
  • 125 g of young spinach leaves
  • 25 g of parmesan cheese, grated

 

Preparation:

  • Heat up the oil in a frying pan and add the onions, garlic, chili flakes and stir it constantly for approximately 5 minutes.
  • Meanwhile, boil the pasta according to the instructions on the pack. I normally add a teaspoon of salt and a tablespoon of oil, it makes them tastier.
  • Add the tomato chunks, the wine and oregano to the rest of the composition in the pan. Allow it to boil for 10 minutes, stirring from time to time. Add the spinach and let it soak for approximately 2 minutes.
  • Drain the pasta and mix it with the composition from the frying pan until you get a homogenous composition. Add grated parmesan by taste.
